The UHP treatment, different from pasteurization, consists in putting the bottle and its content under a pressure of the order of 5,000 bars, enabling the preservation of the organoleptic (taste, color, texture) and nutritional qualities of the juice for the duration of its shelf life, while improving the safety of the freshly bottled juice by destroying undesirable micro-organisms and keeping the natural enzymes intact. Whereas pasteurization uses extreme heat to kill off bacteria, it also destroys natural enzymes (present in fresh juice) that can aid digestion.
